Winter Wonderland Salad ~ A Delicious, Easy, Healthy Meal
Many of us are enjoying the foods and treats of the Holiday Season.
We sometimes forget the importance of daily fruits and vegetables in our diet. This salad was my dinner today and can easliy be made as a main or side dish. There really is no recipe and there are so many variations to make. I included some of our left-overs and suggested options for your tastebuds delight.
The directions are for a 1-large main-dish dinner serving. I like to make similar seasonal salads on platters to serve 2 or more.
Have a salad and eat your party food without guilt. I love making and eating Seasonal Salads!
Winter Wonderland Salad
Place on a plate a bed of mixed greens (I really like to include some arugula)
Sprinkle all other ingredients on top of greens:
1 celery rib, diced
1 Fuyu persimmon, cubed
1/2 avocado, cubed
1/3 cup whole cranberry sauce
1/3 cup roast turkey, cubed
1 to 2 tablespoons of goat cheese or feta
1 to 2 tablespoons Spiced Candied Nuts*, spiced or lightly roasted nuts of choice
Drizzle with Herbalist Vinaigrette* or your favorite vinaigrette
Eat and Enjoy! You can almost feel those yummy nutrients enriching your entire body 🙂

– Beets, roasted, canned or raw
– Carrots, roasted, cooked or raw
– Winter Squash, roasted
– Ham, cubed
– Brussel Sprouts, roasted or raw
– Cheeses of choice
