3 Meals with Rotisserie Chicken
3 Meal Rotisserie Chicken This is one of the things I like to do for the two of us. Buy 2 chickens for 4 to 6 people.Meal #1- Fresh Rotisserie chicken. Our dinner was wings for me, leg n thigh for hubby, along with a salad and honey mustard potato chips 😉
Make Broth After dinner or the next day
- Removed meat from the bones and store in the refrigerator
- Place bones and skin in an Instant Pot
- Add: 8 cups of water
- ¼ cup apple cider vinegar (this helps disperse the minerals and cartilage from the chicken into the broth)
- 1 or 2 bay leaves
- 7 peppercorns
- Any of these (celery, celery seed, greens, carrots, squash, onion, almost any vegetable, but I don’t add cabbage or any of the brassica family. They can be strong.)
- Adjust and increase time to 90 minutes. When it’s finished, repeat the 90 minutes two more times. You don’t have to do this, but if I am at home I like to. That way we are getting the most out of the chicken and a richer broth. Or start with 90 minutes of pressure then slow-cook on high for 12 hours
- Strain broth and make rice, or cool and store in the refrigerator for 3 days or freeze
Meal #2 – Chicken and Rice Serve this delicious comfort food with a salad and vegetables. You can adjust the amount of rice you are making by doubling this.
- 4 cups chicken bone broth
- 2 cups brown rice or your favorite rice
- Herbal seasoning salt, garlic, sea salt to taste
- Cook in Instant Pot on rice setting. I find that I need to do it twice or double the time for brown rice.
- Coarsely chop the desired amount of deboned chicken
- Stir chicken into the hot rice and enjoy!
Meal #3 – Peruvian Bowls This is one of my “EnJoy It Your Way” meals*. So fun for each person to layer their bowls according to their preference.
- Preheat oven to 400′
- Peel and cube 2 sweet potatoes and 1 onion
- Place into greased baking pan
- Drizzle with 2 tablespoons olive oil
- Season with 2 teaspoons ground cumin, herbal seasoning salt, garlic, etc
- Roast for 30 minutes
- Drain and rinse 1 can black beans
- Place black beans into the pan of hot roasted veggies and place back in oven while you heat chicken and rice
To Serve:
- Per person place chicken and rice in a pasta bowl or plate
- Top with roasted veggies and black bean mixture
- Layer as desired; shredded lettuce, peach salsa, cheese, sour cream, olives, cilantro, and guacamole.
